BROWNIE
1 cup almond flour
1 egg
1 sweet potato / 1/2 large sweet potato
5 tbsps hershey's cocoa - 100% cacao natura unsweetened
2 spoonfuls of dates
1/2 cup boiled water
2 tbsps ground flaxseed
2 oz coconut oil
1 1/2 tsps baking powder
1/2 cup zero sugar chocolate chips
FROSTING/GLAZE
3 oz coconut oil
1/4 cup zero sugar chocolate chips
1 tbsp hershey's cocoa - 100% cacao natura unsweetened
1-2 tbsps sweetener of choice (monkfruit/stevia/etc.)
Preheat the oven at 350 F and cover the pan you will be using with butter/oil/non-stick spray/parchment paper. Also boil some water to use later.
With a fork make holes on your sweet potato and microwave it for about 5-8 minutes until cooked.
Then peel the sweet potato and add into a blender.
In a separate small bowl add the dates and boiling water to dissolve them, next add the ground flaxseed and leave resting for 5 minutes and then add to the blender, and add the melted coocnut oil, now blend the sweet potato.
Once those are blended together continue to add all the other ingredients, egg, the almond flour, cocoa powder, cocoa, baking powder and you can blend them until combined or mix them.
Once the mix is done you may add the chocolate chips or any other thing you wish to add.
Then pour into your previously lined or greased pan, and put into your oven for about 20-30 min.
Remove from the oven and let it cool for a few minutes before enjoying!
