2 cup oat flour
3 tbsps coconut flour
2 scoops 100% whey protein powder
1 egg
1 flaxseed egg
1 spoonful greek yogurt
2 tbsps butter
1-2 tbsps monkfruit
2 tsps vanilla extract
2 tsps baking powder
1/2 cup zero sugar chocolate chips
Optional: half a banana
Preheat oven to 350°F (180°).
Add softened butter and sweetener (monkfruit) into your bowl and cream it in your mixer or with a hand mixer.
If you choose to add half a banana this would be the moment to do so, and try to leave no chunks and blend it in well with your mixer.
Then add egg and flaxseed egg to the bowl and mix in.
Add all other ingredients, oat flour, coconut flour, protein powder, greek yogurt, vanilla extract, baking powder, and mix until combined.
Now add the chocolate chips and line your baking tray with parchment paper.
Scoop out the cookies onto your tray.
Take the tray into your oven on the middle bottom rack for 10 mim, and then switch to middle top rack for 10 min.
Once cooked, take them out and let them rest for a few minutes before enjoying!
Store in an airtight container for their chewiness and softness to last longer.
The banana is optional, it will help the creamed butter and sweetener to become a nice consistency if mixed in well, but not really needed.
