These are the best cookies for all gluten-free lovers and for all of those out there trying to eat healthy!
Start off by cutting the portion of butter you will use make sure its softened and add to your bowl.
Once, added go ahead and add the alternative sugar of your choice, I added what I use as an example, and mix, mix, mix, to cream it. When it is creamed it will be a fluffy, and smooth mixture with the sugar evenly dispersed.
At this time it is good to start preheating your oven to 350°F (180°).
On your mixing bowl add the almond flour, greek yogurt, baking powder, and vanilla extract, on top of the creamed butter and sugar. Mix this until combined.
After, you can add the chocolate chips, you can add more if you want to, or add other toppings of your choice.
Now, the dough is ready to bake so line up your tray with parchment paper, and roll your dough into balls.
Put your tray into the oven and approximately 10 minutes on the medium level tray and 5 minutes on the top tray of the oven until you see they are fully cooked and have a nice golden shade.
And finally your cookies are ready to let them rest until cool and ready to eat.
2 cups almond flour
5 tbsps of alternative sweetener (Ex: 3 tbsps monk fruit + 2 tbsps xylitol)
1/4 cup butter (1/2 stick)
3 spoonfuls of greek yogurt
2 teaspoons baking powder
1 teaspoon vanilla extract
1/2 cup dark chocolate chips (zero sugar chocolate chips)
I LOVE these whenever I'm doing a keto diet, they are just as good as a chocolate chip cookie.
Obviously, you have to get used to almond flour and its different flavor and consistency but they are the best healthy, no-guilt chocolate chip cookies I have tried!
You can also use brown sugar as a sweetener of choice HOWEVER they aren't a option for keto and it's not as healthy.
I'd reccommend Zero Sugar Chocolate Chips if you can find them at your grocery store.
Once, I used 100% cacao dark chocolate and let me be real and tell you that its not the best chocolate out there but during keto I had to do this, and its the closest I got to eat a good chocolate chip cookie during the diet.
You can also make homemade dark chocolate with coconut oil, cocoa powder, and alternative sweetener at home.
